Embedded fonts are font files that have been saved as part of a PDF to ensure that text in the PDF that uses that font displays correctly, even on computers that don't have that font installed. When a font is embedded (and not subset), the entire font file is saved as part of the PDF file, including characters that aren't actually used in the file. This means that the PDF file will be larger on disk than it needs to be, because font data for those unused characters isn't necessary to display the file accurately; however text that uses the embedded font remains editable.
